Delaware North Sportservice team at Lambeau Field impresses with back-to-back holiday parties

It’s a busy time of year for many restaurants, but few culinary staffs are challenged with handling two very large holiday parties on back-to-back nights – and then serving 80,000 football fans two days later.
 
But that’s exactly what the Delaware North Sportservice team at Lambeau Field, home of the Green Bay Packers, recently pulled off, garnering rave reviews along the way.
 
On Dec. 10, just a few days before the Packers hosted the Dallas Cowboys, the Delaware North team catered the Packers’ annual holiday party, hosting nearly 800 players, employees and other guests. The featured chef stations served items such as hand-carved, hard-cider-brined heritage turkeys; gourmet grilled lamb burgers and Wagyu burgers; filet mignon with roasted wild mushrooms; and poached lobster tails.
 
The impressive offerings of the evening were topped off with an amazing dessert train, complete with its own cookie conductor (Delaware North's general manager at Lambeau Field, Charlie Millerwise, as pictured at right) driving it through a gingerbread neighborhood table-scape.
 
“The effort put forth by Executive Chef Heath Barbato and our team truly exceeded expectations and garnered many compliments from the Packers,” Millerwise said. “All of the amazing culinary offerings, in addition to the live music and spirited atmosphere of the evening, made for a very successful event.”
 
A day later, on Dec. 11, the Delaware North Sportservice team at Lambeau Field hosted an even larger holiday party – for Acuity Insurance, which is headquartered in Sheboygan, Wis. The party for 1,600 guests spanned two floors of the Lambeau Field Atrium, with attendees treated to a delicious plated duet of chicken bruschetta and Black Angus filet. In true Wisconsin style, guests were welcomed with tray-passed brandy Old Fashioned drinks and local beers.
 
The evening was highlighted by two special guests, Packers linebacker Clay Matthews and musician Kellie Pickler. As guests departed, each received a signature Lambeau Field souvenir hot chocolate mug, topped with cinnamon and marshmallows.
 
“Again, the attention to detail exhibited by our team truly impressed the guests throughout the entire evening, providing them with warm holiday memories for years to come,” Millerwise said.
